Malai tikka Recipe by Debashri Ghosh


  • Chicken (boneless)…….500 gm ( cut into 1”pcs)

First marinate

  • White vinegar…. 4 tbspn
  • Salt….1 tspn
  • White pepper powder…..1/2 tspn
  • Ginger paste….. 1 tspn
  • Garlic paste…. 1tbspn
  • Oil…… 2 tbspn

Second marinate

  • Yogurt….2 cups (hang in a muslin cloth fr 1 hr)
  • Cashew nuts…..4 tbspn (soak in hot water n thn grind to a smooth paste)
  • Egg white….. 1
  • Cheddar cheese…. ¼ cup (grated)
  • Oil….. 3 tbspn
  • Green coriander….. 2 tbspn (chopped)
  • Green chili…..1 tbspn (finally chopped)
  • Cream……4 tspn
  • Butter…. 1 tspn
  • Black salt….1 tspn
  • White pepper pwdr….1/4 tspn
  • Lemon juice…. 2 tbspn
  • Chaat masala….. 1 tspn
  • Mace (javitri) pwdr….. ½ tspn
  • Cardamom pwdr…. ¼ tspn


  1. Wash d chicken pcs n pat dry on a kitchen towel,
  2. Marinate the pcs in d first marinate for 1 hr in the fridge
  3. In a flat dish rub the cheese with palm till smooth. Add yogurt mix thoroughly until cheese is smoothly mix with the cheese. Add egg white n mix well. Add the remaining ingredients of second marinate. Mix till smooth,
  4. Add the marinated chicken pcs. Mix n keep in d fridge till serving time,
  5. Cover the wire rack of the oven with well greased foil. Place the marinated chicken pcs in it. Rub the leftover marinade on the pcs,
  6. Cook for 15 – 20 min in a pre heat oven at 180*C till well browned and cooked (if the chicken is not well browned from top after getting cooked from inside then put the chicken in the grill mode for 2 – 3 min)
  7. Serve hot with green chutney and onions
